David Bibbey – Creamy & Delicious Broccoli Soup for 4 in 35 minutes

This week I decided to share another great recipe.

Broccoli heads are rich source of phyto-nutrients that help protect from prostate cancer and stroke risks. It is actually a flower vegetable and known for its notable and unique nutrients that are found to have disease prevention and health promoting properties.

When prepared with this recipe it is also Creamy, Delicious & Healthy.

Soup for 4 in 35 minutes!

Creamy & Delicious Broccoli Soup

Prep Time: 15 Minutes

Cook Time: 20 Minutes

Ready In: 35 Minutes

Servings: 4

“Cashews help thicken this creamy broccoli and potato soup that will please your vegan guests.” 

Ingredients:

1 cup raw cashews

5 cups vegetable broth, divided

2 Yukon Gold potatoes, cut into 1/2-inch

cubes

1 onion, finely chopped

4 1/2 cups coarsely chopped broccoli

1 teaspoon dried basil

1 teaspoon fine sea salt

1/4 teaspoon freshly ground black

pepper

Directions:

1.

Soak Cashews in water for 2 hours.  Drain and blend cashews and 1 cup vegetable broth in a blender until smooth, about 1 minute.

2.

Pour the remaining 4 cups vegetable broth into a large pot; add potatoes and onion. Bring to a simmer, cover, and cook for 5 minutes. Stir in broccoli and basil; return to a simmer. Cover and cook until potatoes are tender, about 10 minutes.

3.

Stir cashew mixture into soup; add salt and black pepper. Bring to a simmer and immediately remove from heat. Transfer about half the soup to a blender; blend until smooth. Return blended soup to pot and stir well. Serve immediately.

Sweet Potato & Chipotle Soup

SERVINGS:  6

Ingredients:

2 tablespoons Grape seed oil

1/2 medium white onion, chopped

2 garlic cloves, smashed

1 teaspoon finely grated fresh ginger

2 Gala apples—peeled, seeded and coarsely chopped

1 celery rib, thinly sliced

1 3/4 pounds sweet potatoes, peeled and thinly sliced

1 quart vegetable stock or low-sodium broth

3 cups water

1 Chipotle Chile (Smoked Jalapeno & Adobo sauce)

(Note: Only use 1 Chile pepper – not the whole can, and remove the seeds to reduce the heat intensity)

Salt and freshly ground black or white pepper

Directions:

1. In a medium soup pot, heat oil until shimmering. Add the onion, garlic and ginger and cook over low heat, stirring, until softened, about 7 minutes. Caution: do not burn the garlic. Add the apples and celery and cook for 5 minutes. Add the sweet potatoes and Chipotle pepper, cook for 5 minutes. Add the stock and water and bring to a boil. Cover partially and simmer over low heat until the fruit and vegetables are very tender, about 45 minutes.

2.  Working in batches, puree the soup with stick or vertical  blender until smooth. Season with salt and white pepper and return to the pot.  Serve immediately.  Keeps in refrigerator 3 days.

Our new Food Therapy Program is a classroom for patients, their friends and family, and other newcomers who are interested in learning more about planning and preparing healthy meals. As many of you know, Food Therapy has long-been a passion of mine, and I believe that proper food choices are central to any successful treatment plan; moreover, no person can truly “be healthy” if they do not learn to “eat healthy.”

This is a great opportunity for you to learn more about avoiding preventable diseases by planning and preparing meals that keep you healthy. It sounds simple – eat more salads and less burgers and you’ll live longer; when, in reality there is a lot more to it. Sometimes eating cold-raw salads can actually be the wrong choice for optimal health – depending on your overall health. My goal, and the purpose of this 6 week program is to help you live better: with less pain, preventable disease and with less dependence on prescription drugs – now and into the future.  This 6 week program will teach you how to plan and prepare Gluten-Free, Dairy-Free meals that will improve your energy and overall health.

Before you begin, we will meet for a planning session to identify goals that reflect your specific needs like, weight loss, reducing blood pressure – cholesterol – glucose, anxiety – depression, auto-immune and endocrine disorders, and any other chronic health issues that you may face. We will track and measure your success throughout this 6 week program, so that you can see the results.  Unlike diet plans that are hard to follow and lack teaching tools that help you succeed, this 6 week cooking “boot camp” is easy to follow, and provides you with tools and skills that are easy to implement. I will personally work with you throughout this program to make certain that you are learning all the basics needed to succeed. Together we will make sure you reach your goals.

Additional programs for intermediate and advanced students have been developed so that by the time you finish this starter plan, you can progress to the next module, and continue your journey toward achieving and maintaining ideal health. I am so excited to get started… I hope that you are too.

Early Detection Saves Lives!

Today’s statistics show that one in eight women in the US will develop breast cancer in their lifetime and the rates are rising. Doctors suggest that women start getting yearly mammograms once they turn 40 years old. But let’s talk about the 11,330 young women under 40 who will lose their breast and or life to breast cancer this year. Let’s talk about the fact that by the time a tumor can be detected by a mammogram it has been growing for about 7 years. Let’s talk about the things that are not part of your routine medical consult.…and should be.

January 31st is this month’s date that Advanced Thermal Imaging will be visiting Alternative Primary Care to continue providing Breast Health Screenings here at the office.

As you know this type of screening provides highly specific results that identify changes in the body.  We are most concerned with pathogenic changes which may represent early signs of disease, especially cancer.  This screening option is readily available in larger cities, but for Citrus County residents you have to travel to Gainesville, Tampa or Orlando. For this reason, I have invited my colleagues with advanced training to provide Thermography Screening on Friday January 31st from 10:00 AM to 5:00 PM.
